When life gives you lemons, why make lemonade when you can make lemon meringue pie? Hoping that life also gives you sugar, shortcrust pastry and eggs. Lemon meringue pie is a Kiwi favorite that has been passed down through generations from great grandparents with their own secret recipes and ingredients. This is where my grandmother got her famous lemon meringue pie recipe that she prepared every Sunday since before I was born. I decided to research this particular piece of lemon meringue pie because of the family tradition where we would sit down to a roast at Grandma's every Sunday and finish with a big slice of lemon meringue pie. This is why researching the origin of lemon meringue pie intrigues me, as I would love to know more about this family favorite. I bought my lemon meringue tart from Café Eden, located in Tauranga. Unlike traditional lemon meringue pie, which is usually the standard 9-inch size, the item I purchased was the size of a small pie. The filling case consisted of shortcrust pastry and was then filled with lemon cream. On top was a swirl of meringue, a slice of orange and a delicate sprinkle of icing sugar. I spoke to the chef at Café Eden and asked her about the mini lemon meringue tart and she said, "We used to make our own lemon meringue tarts with real lemons and our own sweet pastries made on site but due to time constraints we now order the mini lemon meringue tarts from Barkers” (Café Eden Chef, 2014). Unfortunately the quality of the product was lacking as it was pre-made, but the lemon curd had a good balance of sweet and sour and wasn't too overpowering.
